Wood sorrel, sea cucumbers, tubers, edible moss and flowers, sour cream and ants – René Redzepi is the founder of the world-renowned restaurant Noma in Copenhagen. He sees the earth as an edible planet, and he draws from its bounty for his unique creations. From lichens to fish to spruce needles: everything that lives and grows in northern climes may end up on the plate, and almost everything served at Noma is local, with the exception of Tuscan olive oil and a few other key ingredients. “People should taste the season and the place where they are”: It was this maxim that propelled Redzepi to the forefront of the international culinary scene and garnered him two Michelin stars. The documentary Noma takes a behind-the-scenes look at Redzepi’s innovative work with his team at Noma, and also provides a personal portrait of this charismatic star chef. The screening will take place at Delphi Lux.
In a talk with Felix Hoffmann, Chief Curator at C/O Berlin, as part of the Summer Cinema series, Ditte Isager, official photographer for Noma, will provide insights into Noma’s contemporary Nordic cuisine and food photography, which she herself has shaped and defined in artistic collaboration with René Redzepi.
